Normal Spoilage

It seems to me that for virtually every food that humans consume, there is a version which has bacterial or fungal growth or other decomposition which we also consume.

Some examples:
Milk - Cheese, sour cream, yogurt, kefir
Meat - Sausage, ham, aged beef
Fish - Hakarl, garum, rakfisk
Eggs - Century Eggs
Fruit - Wine, vinegar
Grain - Bread, beer
Beans - Natto, soy sauce, tempeh
Vegetables - Tabasco, pickles, avocados
Honey - Mead
Others - Coffee, tea, tobacco, chocolate, vanilla, kombucha

Sometimes we even take this food and add another layer of decomposition or spoilage and still eat it.
Double Spoiled - Blue cheese, casu marzu, doppelbock

In fact I read a study (I can't find it at the moment) that revealed that humans have a nutritional requirement for aged or fermented foods.

Are you someone who is grossed out by this and throws away food on the expired date or are you someone who is fascinated and tries a little taste of the mystery goo in the tupperware at the back of the fridge and puts it back to see what happens when it matures a little more?

I throw it away, but Ill leave it in the fridge for your amusement as long as it doesn't start to smell Smile

I forget what stuff is mine. Roommate and I conference about twice a year. If neither of us remembers buying milk or eggs, it's time to throw those things out.

I read about how sausage was made the other day. It was interesting and I am proud to say that I was not disgusted.
